I love a good winter. It should be finger-tingling cold, and foggy
with lots of rain, with hours spent indoors with the slow cooker
on and an apple crumble in the oven. A slow cooked dinner followed by a good apple
crumble and a generous scoop of vanilla bean ice cream sounds like an
ideal winter meal to me!
The spiced apple crumble recipe below is
adapted from Mrs Rogers as it contains
organic vanilla from their new range. The vanilla, along with the
generous amounts of warming spices of cinnamon, ginger and nutmeg makes for a beautifully spiced apple crumble, perfect for a cold winter's evening.
Spiced apple crumble
Serves 4
Ingredients
Apple mix
4 large apples
1 cup mixed frozen berries
1/4 cup caster sugar
1 tsp ground cinnamon
1 tsp organic vanilla paste
Lemon zest
Crumble mix
1 cup plain flour
3/4 cup brown sugar
3/4 cup rolled oats
1/2 cup dessicated coconut
2 tsp ground cinnamon
2 tsp ground nutmeg
2/3 cup melted butter
Directions
- Preheat the oven to 180ºC
- Peel and core apples and cut into rough 1-2cm cubes and place in a saucepan with the sugar, cinnamon, ginger and vanilla paste
- Cook 10-15 mins until the apples are cooked
- Combine the dry ingredients for the crumble in a large bowl and mix. Add the melted butter and mix until the crumble is moist
- Place the apples in pie dish and sprinkle the berries on top. Spread the crumble mixture evenly on top and bake in the oven for 30-40 minutes or until the crumble is lightly browned
- Serve with vanilla bean ice cream or custard.
