About a week ago, my brother gave me a bag full of white-skinned
peaches from his tree. Nature's bounty is a wonderful thing, even
though sometimes it's left
you scratching your head thinking about what to do with a bag full of
produce. You can make chutneys and jams for Africa but sometimes it's
nice to make a quick dessert from the glut of summer fruit.
I sometimes cook fruit when it's cheap or given to me and pop it into the freezer. It's perfect to add to desserts like this one, for a taste of summer in the middle of winter.

With this bag of peaches, I decided to make one of my favourite, quick desserts: a summer cobbler. I like to make a cobbler with all sorts of different fruit and what I
like about it, is that it has so much fruit in it, it doesn't feel too
decadent! 'Cobbler' is an American term for a fruity pudding and I like to call my recipe a cobbler because I think that it sounds so much more exciting than 'pudding'!
This recipe for peach and berry cobbler was devised a while ago and everyone seems to like it - it's fluffy, slightly eggy with a nice firm crust.
Peach and berry cobbler
Ingredients
6 peaches
1/2 cups berries, roughly chopped if necessary
100g butter, softened
1/2 cup sugar
2 eggs
2/3 cup flour
1 tsp baking powder
2 tsp sugar
Directions
Blanch the peaches
Wash the peaches to remove the excess fluff
- Put lots of ice in a large bowl and fill with water
- In a large pot, boil a pot of water. Put the whole peaches in the boiling water for 1 minute
- Take the peaches out and plunge them into the iced water. This will stop them from cooking further
- With a small knife, peel the peaches and roughly chop the peaches into chunks
- Put the peaches and the berries into a baking dish (approx 20 x 30 cm)
Prepare the cobbler
Heat an oven to 180ÂșC
- In a mixing bowl cream the butter and first measure of sugar together until light and fluffy
- Beat in the eggs, one at a time, mixing well after each addition
- Sift the flour and baking powder into the mixture and stir well to combine
- Sprinkle the berries (I used strawberries) over the peaches
- Spoon the cobbler mixture over the fruit and mix roughly to combine. I like to do this very roughly so that there are pockets of fruit
- Sprinkle the top with the second measure of sugar
- Bake for 50 mins or until cooked and golden brown in the middle.
Serve immediately with lots of ice cream.
